Roasted Cauliflower Pitas

For the Vegetables:
For the sauce:
What to do:
Preheat the oven to 425 degrees.
Make your spice mix in a small bowl
Chili powder - ~1 Teaspoon
Garam Masala - ~1 Teaspoon
Cayenne pepper - Very small pinch (optional)
Salt - ~1 Teaspoon
Pepper - ~1 Teaspoon
Open 2 cans of Chickpeas (aka Garbanzo beans)
Drain the beans with a colander
Chop up your 1 or 2 heads of cauliflower, break/cut them into bite-size pieces
Put all of the cauliflower and beans on a baking sheet
Drizzle about a tablespoon of oil
Sprinkle your spices on
Give the pan a shake to get them mixed in
Put the pan of beans and cauliflower in the oven
Set Timer for 15 minutes
Now you have time to make the sauce
Make the avocado sauce in a blender
In a blender add the following:
2 Avocados
2 cloves of garlic
A handful of cilantro
About 2-3 Tablespoons of water
Salt - ~1/2 Teaspoon
Cumin - ~1 Teaspoon
Juice of a lime
Half of a Serrano pepper (optional)
Blend it up until it looks like sauce
Should be thick but pourable
Add about 2 Tablespoons of water at a time
Go to the oven and give the beans/cauliflower a stir
Set the timer for 15 more mins
Heat up your pita bread in the oven (if you want)
Put the beans, cauliflower, and sauce on our pita and enjoy
